Chocolate biscuits "Pinguinos" with cream filling

Ingredients:

Biscuit

  • 1 cup whole oats
  • 1/4 cup Morama coconut flour
  • 2/3 cup almond milk
  • 2 eggs
  • Stevia droplets
  • Vanilla
  • 2 tbsp cocoa powder
  • Baking powder

Filling

  • Yogurt
  • Stevia
  • Vanilla

Filling

  • Dark chocolate

Instructions:

  • In a blender, combine all the ingredients for the biscuit.
  • Grease muffin cups and pour in the batter.
  • Bake for 15 min at 350 F / 176 C.
  • Remove the muffins from the oven and let cool. Then make a small hole in the center of each and fill with cream. Transfer muffin pan to freezer for 15 min.
  • Once the crust comes out of the oven, pour the filling immediately on top.
  • Take out of oven and let cool for some minutes before removing from mold
  • Cover the muffin pan with melted chocolate and decorate each muffin with waves using the cream.
